Yay for Fridays!

Happy Friday everyone! First one in October!  It still blows my mind that it is already October but that just means Christmas is right around the corner!  I can’t help but have some Fall Favorites…..

1- Fall Everything.  What can I say? I absolutely LOVE fall.  Fall and Spring are my favorite seasons but Fall has so much you can decorate with and is just so fun.  The weather is getting cooler.  And I just love it!

2- Apple Cider.  I have not had any yet (we are still in 90+ degrees most days :) but I will!

3- Boot Weather.  I cannot wait to be able to rock my boots again.  I actually may need another pair….

4. Fall Candles. I have not purchased them yet but I cannot wait to go do so.  Maybe this weekend? :)

5. Leggings, Sweaters and Tunics.  I can’t be the only one.  I have already been wearing this outfit and it works fine in my house (air conditioning:) but when I walk outside, not so much….

Mom’s Pumpkin Bread

Anyone who knows my Mom knows she is an amazing cook and baker.  She has so many recipes that she has been baking since I was little and now I am making them myself.  The other day I wanted to make some pumpkin bread and knew that I needed to ask her for her recipe.  It was easy, came out delicious and I can’t wait to make some more of it!

Mom’s Pumpkin Bread

3 Eggs

1 can pumpkin

3/4 C vegetable oil

1/2 C water

Beat until mixed up.  Then add:

2 1/2 C flour

2 1/4 C sugar

1 1/2 tsp. baking soda

1 1/4 tsp salt

3/4 tsp nutmeg

3/4 tsp cinnamon

1 c raisins

1/2 c nuts (if you want, I never do :)

Pour into two greased loaf pans or three greased 1 lb coffee cans.  Bake at 350 degrees about 1 hour or until toothpick inserted comes out clean.  Do not overfill your loaf pans.  Use three if you need to.

Fabulous Apple Cobbler

This Apple Cobbler is always a hit when I make it.  I found the recipe here.  I tend to alter it a little everytime I make it by adding some more cinnamon or flour as I see fit.  It is pretty easy to make and turns out delicious every time I make it.  It is often requested as well.  Definitely give it a try!

Ingredients:

Peeled, cored and sliced apples- enough to fill a 9×9 baking dish half way.  (I like to cut them pretty thin as I think it tastes better that way :)

2 tsp. vanilla (divided)

1 1/2 c sugar (divided)

1/2 tsp. cinnamon

2/3 cup melted butter

1 egg

1 c flour

1/4 tsp. baking powder

pinch of salt

1/2 c nutmeats (optional, I never put them in)

 

Directions:

Preheat the over to 35o degrees.  Butter the 9×9 baking dish.  Put enough apples into the baking dish so it is 1/2 full.  Sprinkle the apples with 1 tsp vanilla.  Then sprinkle 1/2 cup sugar and 1/2 tsp of cinnamon over the apples evenly.

Combine the melted butter, egg, and the remaining vanilla.  Then add 1 c sugar, flour, baking powder and salt and mix together.  Pour batter evenly over the apple slices.  I tend to spread it out using a spatula as well.  Then bake for one hour in the oven.

Yum!  Serve it warm with some ice cream and everyone will be asking for seconds!

Fall Favorites: Food Edition

There have been so many fall recipes that I have been seeing around the internet and linked up to Handmade Tuesdays (com link up every Tuesday (Goes live on Monday at 5:00 pm).  I would love for you to join next week :)  I wanted to share some of my favorites that I have found.  Have you found any fall food ideas and recipes? I’d love to hear about them!

 

Just look at this caramel apple cake from Upstate Ramblings.  I have an obsession with baking desserts and cool weather + desserts = my favorite.  This looks absolutely delicious and has apples baked

 This Homemade Apple Butter from Scattered Thoughts of a Crafty Mom looks absolutely amazing.  I love apple butter.

 

I love all things pumpkin and was so excited when I saw this Pumpkin Ice Cream recipe from Classy Clutter.  Yes you need an ice cream machine but totally worth it just to have this recipe!

And Pumpkin Bread!  I love all types of bread, banana, cranberry, Amish and Pumpkin!  Check out this Pumpkin Bread from Simply Sweet Home.  Last time I was at the grocery I specifically bought some pumpkin so I could make some bread.
